Iphone


So the husband and I are now proud owners of an IPhone. We finally made the switch to AT&T. Wow, why did we ever wait so long. We've been using Sprint for a while, but we often have bad cell service. We were going to switch last year and Sprint offered us a great deal. We opted to stay. So when my blackberry broke last week I had to scrounge around and use my old phone for a few days. It was miserable. I convinced the hubs that it was time. Of course ask me in a month when we receive the bill for cancelling at sprint and joining AT&T. It's gonna be bad!

Okay, so I downloaded the weight watcher app for my phone. Hopefully I can start journling on my phone as well. We shall see. I haven't officially journaled yet, but I did add it to my phone.

My next task is to find me some sort of case to carry it in. I already purchased a protective cover, but now I want a small pouch or bag to carry it in while inside my purse. I'm on a mission to find one of those tonight. I was hoping Vera Bradley makes a cute bag. Not sure though I can find the size I want. I want it minimal in size. I'll have to do some research on that some more.
Food is going okay. I need to buckle down a little. I rewarded myself a little over the weekend with a few too many indulgences. Last night I had a few french fries etc. Time to buckle back down. I weigh in tomorrow! EEK.

Trying to stay well

I feel like I around sick people all the time. I'm totally popping my Vitamins like a maniac. Most people seem to be getting sinus stuff or at least that's what I'm hoping it is. My nephew though has strep. Thanks goodness I've never had it, so therefore, hopefully I won't get it.
Weekend was good...Hogs lost! We just really stink!

So I got 3rd place at the PNP challenge. I won $99.00. WOOT!
She is planning on blogging about it, when she does, I'll post the link.

I have also started a new challenge at PNP this week. I'm going to start taking pictures of my workouts as well as my food. I'll post a few things on here just to keep my blog world interested in what I'm doing.

I did Edamame and lite organic popcorn for snacks, taco soup for lunch and steel cut oats with blueberries for breakfast. Dinner tonight will be veggie stir fry.
I don't have a picture of that yet.

Crazy Thursday!

Wow, yesterday was just a crazy day for me.

First of all our car is having trouble. Our 2004 Honda has 180,000+ miles on it and it seems to be having more and more troubles these days. Yesterday the husband and I just knew our Honda's life had just ended. Thank goodness it was fixable. It is paid off so we really want to enjoy that a little while longer!

Then I took half a day vacation to help my sister with 2 catering jobs. While helping, I dropped by phone! It isn't working!!!!!!
I had to call the cell phone company and get them to disconnect while in the mean time I had to dig around and find my old phone and charger! What a day. I was up till way too late last night trying hard to get that figured out.
I plan on going today to see if my phone can be fixed. We shall see. Hopefully so, if not, I may be stuck with my old phone till we decide what we plan on doing. We both want Iphones so this may be the time to do it. We've enjoyed the blackberry but we really want the other. It will require changing companies, but I'm okay with that.

Okay, today I'm headed to a cookout for work. One of our Wastewater Treatment Plants is having a grand opening for the new renovated facility so I'm off to cookout. Yes, I said cookout at a wastewater plant! Sounds disgusting doesn't it. We probably won't even be near the actual "area" but YUCK!
I work for civil engineers, hence the reason I'm even attending such a thing.

Okay, big weekend of absolutely nothing!!!
I'm planning on running in the AM and thats it. We'll watch the HOGS take on Alabama this weekend but thats about it. I love it....Sounds awesome just to say home. I really want to do some house cleaning and a little cooking.

Weekly shopping trip

Today was my weekly shopping venture over to our whole food/health food store. I only spent $20.00. Gotta love that.
I bought a few things to try. One is this:
My dad has done the low carb diet for years. He's lost right at 100 lbs. I found this and thought he might be interested. It is low carb flour. My dad is a certified chef so he's always out to try new things that meet his low carb guidelines. Will keep you posted on this. I'm also interested to compare this to regular flour.

I also purchased these! I of course love Guiltless Gourmet stuff. I normally buy the blue chips but I branched out and got the normal corn chip flavor this time. I'm sure they taste roughly the same. 2 points for 16-17 chips I believe.

Then I noticed these as I was heading out. I've only tried edamame a few times so I wanted to see what a dry version was like. Oh my goodness...YUMMY and full of protein. I'll definitely get these again! 2 points for 1/4 cup. Then finally, I noticed these. They are just okay. I think by themselves I could refrain, but on a salad it was be a nice crunch. It is little baked crisps made from bell peppers, tomato, carrots, pumpkin, spinach, etc. Again, not bad as a salad topper, but not something I would eat on a regular basis as a snack. 3 points for 1 oz. I would obviously not use many to save my points. Would just be a nice added crunch.

I must get going. For some reason, I am swamped today....

Chicken Tortilla Soup

So I made a new recipe over the weekend. I decided to go ahead and share it because it was pretty good. I'm not sure I'll make it again or not, but it was good.
I didn't do the tortilla strips either, I was trying to cut it down to lower points and I did by 1.
So, here is the recipe:

Crockpot Tortilla Soup
Makes 6 servings, 6 points each.
Ingredients
1 1/2 lbs boneless skinless chicken breasts
15 oz whole tomatoes
10 oz enchilada sauce
1 medium onion, chopped
4 oz chopped green chilies
1 clove garlic, minced
2 cups water
14 1/2 oz fat-free chicken broth
1 tsp cumin
1 tsp chili powder
1 tsp salt
1/4 tsp ground black pepper
1 whole bay leaf
1 cup fresh or frozen corn
6 whole corn tortillas
2 Tbsp vegetable oil
1 Tbsp chopped cilantro
Instructions
Cook and shred chicken. Combine in crock pot with all ingredients except tortillas, oil, and cilantro. Cook on low 6-8 hours or on high 3-4 hours. Preheat oven to 400 degrees. Cut tortillas into strips and place on baking sheet, brushing lightly with oil. Bake 5-10 minutes or until crisp. Immediately before serving, sprinkle tortilla strips and cilantro over soup.

It makes 6 servings at 6 points each, but I again cut out the cilantro ,oil and tortillas so it came down by 1 point.

What a weekend....

Friday I went to see my husband ref a game near our home. We didn't say too long because it started raining. Of course after we left it never rained a drop again. :(

Saturday we went to the Razorback game.

So, we lost, but I guess you can't win them all.
We got home L-A-T-E on Saturday night.

Sunday we had church, lunch at my mom and dad's, then our yard was a jungle so we had to mow it. Then a friend of mine had 2 extra tickets to see Jeremy Camp, Natalie Grant and Bebo Norman. WOW, awesome concert. I had heard of both Jeremy Camp and Natalie on Klove, so I knew most of the songs they played.
We had a good time but again, L-A-T-E night, especially when you wake up at 5 in the morning.

Saturday I opted not to run. I just couldn't do it. I really wanted to, but I was afraid to push my leg and I want it to heal. I figured if I did something on it, I might injure it worse and then have to push running back even more.

I had a super duper eating weekend. I ate so good....WOOT for that!

PNP challenge stats have to be submitted by Thursday, so I'm going to take my final stat pictures in the am. I've lost about 9 lbs. I'm not sure I can squeak out 10. I wanted to do so and 10 was my goal, but I'm beyond thrilled with 9 lbs!

Recovering

Yes, I've been taking it easy for the last few days. Trying to rest up my leg. I have had minimal pain for the last 2 days so I'm hoping it's getting better.

My running group is running in the morning. The plan is 10 miles. I won't do all 10, but I'm going to try and maybe do 4. Not sure exactly what I'll do, but I'm going to try something.
We will go at 5:30, so the nice thing is I'll be done early in the morning.

Today I have my manicure appointment and then tonight the husband has a game near our home. They are normally 1-2 hours a way. I'm going to go out and see him do his ref thing. Last night he was a white hat. For those of you that know what I mean, it is a big deal to white hat a game. He said he did good.

So last night I spent the night catching up on DVR shows. I watched BL, and a few other things I had tapped. I didn't get to Project Runway, but I will sometime this weekend.
BL is going to be good this season.
I also was flipping channels and landed on Beaches. Okay, I'm such a sap. I cried at the end. In fact, I was crying when Hillary got pregnant. I knew what was looming. The husband got home right at the end of the movie. He couldn't believe I was crying. That is a movie that just makes you think how short life can be sometimes. I know it might be cheezy to some, but it still had me boohooing!

This weekend I'm making a crockpot chicken tortilla soup. Sounds delicious! I'm also stocking up on okra this week for more roasted yumminess!

I have officially 5 days until our Back to School Challenge ends at PNP. I really want to win! I'm so going to bust it hard this weekend and next week to finish out strong.

Injured....

So Tuesday night as you all know I went out for a short run of about 3 miles and then I walked 1 mile. When I got home Tuesday I was slightly sore, no big deal. I again was just relating it to the jumping back in the running again. Then yesterday at work I noticed that I wasn't sore anyplace else but on my right leg at the top near my groin area.

By the end of day yesterday I was limping.
I think I might of pulled my groin. I laughed yesterday with a boss because I told him I thought I had hurt myself. He asked me what I did and I told him I thought I had pulled my groin. I then proceeded to ask him if women can pull groins. So here me and the boss are talking about our pulled groins. WOW, what a weird conversation. He proceeded to tell me that when he ran track he pulled his groin often and that the recovery time can be sort of lengthy! Great!

So last night I stretched it and went to bed. This morning I woke up to minimal pain. I'm not sure if that is because I rested it all night or if maybe the injury isn't as severe as I thought. I'm not taking any chances though.
Will rest today and then think it over and decide on when I can really jump back in.

Almost apple time...

It is raining like crazy in Arkansas. Has been since Monday. In fact, we passed at least 3 if not 4 wrecks on our drive in this morning. My husband and I commute in (45 min) everyday and yes, we carpool together. It works out good. The bad part is I work in downtown and he works out west. We make it work though. We've been doing this for over 4 years now and honestly, we maybe take 2 cars to work 1 a month! Can't complain about that.

Anyhow, back to my original post. It's been raining cats and dogs here. I woke up several times last night to rain. Not just mist rain, I mean buckets.

So last night in between the rain I got out and ran. Okay, I'm going to admit it, I'm SOOO SORE! My legs are killing me. I walking on Monday to help with soreness and that was good, but yesterday I really wanted to hit the pavement. It immediately started hurting. When I say hurting, the only thing bothering me is my legs, in fact it is the inside of my thighs that are feeling it the most.
When I started yesterday I about stopped, but it got better. I ran for about 30 minutes. It wasn't easy, but the humidity must of been 90%. YUCK! I was one sweaty mess when I got home.

I love apples in the fall. My favorite apple is Rome, but I'll eat any kind. The last few weeks I've been buying Golden Delicious. They haven't been up to par, but I've eaten them. Someone told me that when you have a high sodium meal to eat an apple afterwards and it helps with sodium. I have no idea if that's true or not, but I'm not opposed to trying it.
Anyhow, I'm ready for my Rome's to start popping up. Hopefully here in the next month or so they will.

My reason for discussing apples is: Last night I had a few golden delicious apples that were turning yucky. I had looked at them for days and thought I needed to eat those. They just didn't look appealing. So while cooking dinner last night, I had a bright idea to cut around the bad spots and chop it up. I then topped with brown sugar splenda and a little bit of smart balance. I then put it in the microwave and nuked for about 5 minutes. I decided to peal one of the apples, but leave the skin on the other. Oh my goodness that's all I have to say. I did allow myself only 1 serving though.
I figured it out to be about 2 pts for each serving.

Today I have my weekly weight watcher meeting I lead. Last week we started a new 10 week session and we had 4 men join. Will be interested to see how well they do.

New addiction


So, I currently have an addiction to okra. I've been making it for about a month or so. My sister shared a similar recipe with me a while back, so I thought I would give it a try. I've sense had to move to frozen okra because the fresh isn't really around in my area anymore. I'm fine with frozen, it basically tastes the same to me.

So, here it goes. These are the ingredients you need:
A bag of okra, a little cooking spray and some olive oil. So simple! I start by spraying my baking pan with the spray. I do this so I'll use less oil. Trust me I'd much rather coat it in olive oil, but for calorie/fat reasons I try and use both. After I spray my pan I dump the okra on the pan. Then I drizzle a little olive oil on top and finish it off with a little salt.
When I was a child, my mom would make fried okra. My ultimate fav in the summer time. This recipe is basically roasting it, but I let mine cook for a while. I want it crunchy like the texture of fried. I let mine roast for 2 hours on 400 degrees. Yes, that is 2 hours. I stir it every 20-30 min. In the beginning you'll see the slim a little, but just give it time, that goes away, I promise.
So here is the finished product:

I LOVE, LOVE, LOVE it.
In fact, I can't get enough. I could sit and eat the entire bag in one setting. Sure it is healthy, but I probably don't need to indulge in that much okra in one setting.

Anyhow, I would highly recommend giving it a try.

Regardless of okra, I love roasted veggies. I love to roast zuch, squash, onions, egg plant, etc. I've even done a potato every now and then.

Totally give this a try.
Last night I just walked. My body is still recovering from the beating it took on Saturday with the running. I feel great today, so my plan is to run tonight for 3 miles and see how I do. One bad part is the humidity is killer here right now, and on top of that, they are calling for rain for 3 days! :( Hopefully I can still squeeze in a quick run.

Tonight I'm doing taco salads for dinner. Man it's been a while.

Weekend, Beatles and back to Running

Friday my husband went out and got Beatles Rock Band. Needless to say we played off and on all weekend. I'm not good at doing two things at one time and so this really challenged me. We had fun though.

Friday night I went to the CATS game. It was fun, but we lost again. I will say we've made some great improvements from the week before. Maybe this week we'll be able to win.

Saturday morning I decided to go running with some friends that are training for the Memphis St. Jude Marathon. This week they were scheduled to run 10 miles. I wanted to think I could do it, but I wasn't sure. I haven't run since the marathon in March, so I knew this would be a slight challenge for me. So we went at 5:30. For those of you familiar with Jeff Galloway he does 4:1 or 8:2 etc. I did the 4:1 method of run 4 minutes walk 1 minute for all of my halfs and the full. This running group though does 8:2. It was a slight adjustment for me. I went out and in the end ran 6 miles with the group. One lady needed to stop at 6 due to an injury she is still nursing so I decided I would stop so that I would keep myself from injury.
The worst part was the last 1/2 mile. I had gotten tired and really hot by that point. I made it, but I had to push myself a little.
My plan is to run 3 days this week at 3 miles each using the 8:2 method. Then on Saturday they are doing 10 miles again. I'm going to go out and run with them again and see how it goes. If all goes well, I'm seriously thinking about signing up for the Memphis full in December.

So I tried a new recipe for this week. I found it on WW website. It is another vegetarian recipe. The last one I made was really good.

Baked Pasta with Butternut Squash and Ricotta
2 spray(s) cooking spray
20 oz butternut squash, fresh, peeled and cubed*
1/8 tsp table salt, for cooking pasta
12 oz uncooked whole-wheat pasta, penne
1 1/4 cup(s) fat-free skim milk
2 Tbsp white all-purpose flour
2 tsp minced garlic
1/2 tsp table salt
1/4 tsp black pepper, freshly ground, or to taste
1 Tbsp thyme, fresh, chopped, divided
1/2 cup(s) part-skim ricotta cheese
1/3 cup(s) grated Parmesan cheese, Parmigiano-Reggiano recommended
1/4 cup(s) chopped walnuts, toasted

Instructions
Preheat oven to 375ºF. Coat a baking sheet with cooking spray. Coat a 2 1/2- to 3-quart baking dish with cooking spray.
Place squash on prepared baking sheet; roast until tender, about 20 to 30 minutes. Place in a large bowl and mash.
Meanwhile, bring a large pot of salted water to a boil. After squash has been roasting for about 10 minutes, cook pasta according to package directions; drain and return to pot.
In a medium saucepan, whisk together milk, flour, garlic, salt and pepper. Bring to a boil over medium-high heat, whisking frequently; reduce heat to low and simmer, stirring often, until thickened, about 2 minutes. Remove from heat; stir in mashed squash and 2 1/2 teaspoons of thyme. Add sauce to pasta; toss to mix and coat.
Transfer pasta mixture to prepared baking dish; dot with spoonfuls of ricotta and then sprinkle with Parmesan and walnuts. Bake until top is lightly browned in a few spots, about 15 to 20 minutes; remove from oven and sprinkle with remaining 1/2 teaspoon of thyme. Yields about 1 cup per serving.

5 points per serving, serves 8.

One thing about this recipe that I'll change. I'm not a huge thyme fan. I cut it down in this recipe, in fact I didn't use all that is required. I think next time I might even leave it out.

Hair and beans

Last night I had a hair appointment. I'm really trying hard to let it grow out. I've been working on it for 3 months maybe? Yesterday before my appointment I was at the point of wanting to chop it off. My ends look fried and my hair just hasn't been "cute" in months.
So, I went in to discuss with my hairdresser who is pregnant and looking so good she's only gained 9 lbs and is 29 weeks! Every girls dream!
Anyhow, we discussed it and she told me not to give up on the growing out yet. She told me would trim up the dead spots. When you put color on your hair, it isn't the greatest for it. I'm thinking it might of fried some my hair and that was what was giving me the frizzed look. So here is the new color and cut.



You will notice on the left that I got a few shorter layers in the front. This was one of my areas that needed a little attention. I was glad that it worked out okay. FYI, it was 7:00 am when I took this photo. I've been up since 5, so forgive the dazed look. Anyhow the hair is growing. It was once at chin level, so I've grown about 2 inches so far.

Okay, I've been saying I would share this bean recipe all week, so here it goes. I will tell you that cutting this recipe in half will make plenty. I did a full recipe and my crockpot wouldn't hold all the beans I soaked. I had to trash them. That being said, if you are feeding a small family, I would cut this recipe by half. I did put back at least 2 meals worth in my freezer and then I and the hubs ate on this one pot for MULTIPLE meals. FYI, I'm tired of beans.

2 lb. dried pinto beans
1/2 lb large dried lima beans
Large chunk of ham (i bought one at my walmart and broke it into pieces)
3-4 cloves of garlic
1 lb dried great northern beans
1/2 lb dried navy beans
1 large onion (chopped)

Soak beans overnight in fridge (I put in a little salt and 2 cloves of garlic). The next day rinse off the beans. Put the beans, ham, remaining garlic and onion in crockpot. Cook all day on low or 4-5 hours on high. You will want to add more salt. We also used a little tobasco.

I then made some cornbread with mine. Delicious!

So I had a picture and something happened to it. Oh well.

Tonight is the Cats game so I'm heading off to watch that. My husband is calling a game in North Arkansas so he'll be gone all night and into the morning.
Tomorrow I need to do a 9 mile training walk and then tomorrow night we're headed out with some friends for dinner and ice cream.

We've got a pretty low key weekend. The Hogs are off so we'll be around the house tomorrow.

Oh and I'm still craving that donut....

Sleepy and craving a donut

Don't you hate it when the alarm sounds and you are totally engaged in the deepest sleep ever. Man, that has happened to me the last 2 mornings. I feel like by 9:00 am I'm finally waking up. Not enough coffee in the world will break the exhausted feeling.
I've just been so tired lately.
I'm sure it has something to do with the fact I've had extra activities every night this week. I'm glad the weekend is nearing. The hogs are off this weekend so that means we'll be at home. Yippee.

I forgot the bean and ham recipe this morning! I hate that! I had a picture to share and everything. Oh well, I'll save that for tomorrow.

Here is the lasagna I told you about. No picture. I forgot to snap one last week. I eat this about once a month, so it'll get a picture eventually. This was my lunch from last week. I paired it with a side of green beans.

1 lb extra lean ground beef (brown and drain)
1 jar spaghetti sauce (I used low sugar)
3 cups water
8 ounces egg noodles
1 cup cottage cheese, lowfat
1/4 cup Parmesan cheese
1/2 cup mozz. cheese

In large skillet, cook meat and drain off any extra fat. Return to skillet. Add spaghetti sauce and water and bring to a boil. Stir in noodles. Bring mixture back to a boil, stirring occasionally. Reduce heat, cover and simmer for 10 minutes or until noodles are done.

Add cottage cheese, Parmesan cheese and mozz. cheese; stir gently into noodles. Cover and cook for 5-10 minutes on low.

I normally let mine sit in the pot for a little while. It helps soak up the water even more.

This makes 6 servings, but I normally cut mine down and eat less so I can stretch it a little longer.
If you did 6 servings=11 points.

8 servings=8

Again, this makes tons, I can usually get tons of meals off it. For instance last week I made it for my lunch for 5 days, then the hubs ate it for dinner one night, then I heated the remaining amount up for dinner one night because I was pressed for time etc. I'm just telling you I get multiple servings out of it. I was wishing I had a picture I could show. It is really good.

Here are a few of my other food finds, that I've been into lately. I loves these cereal bars. I buy them at my local health food store. They run me 2 points each and when I'm on the go, these work great for a snack or breakfast option. If I'm eating for breakfast I normally do 2 or I pair it with a fruit or something.
Then I've also had these. I tried one of a guy that I work with. I won't eat these ALL the time just because they have so much sodium in them. I love wasabi though and I love that kick to it. It is a nice change from the normal plain almond that I would normally eat.


So, I explained I was sleepy, but the other title is about donuts. I'm so craving one right now. In fact, I have been for almost a week. Last week we were going to run by KK for a late night donut fix after the ball game. I was going to allow myself 1. I hadn't had one in a while and honestly, I wanted one. Well, they close at 10. For the love, I can't believe it. 10 on a Friday night! So, that being said, no donut. Now all I can think about is a donut. I've had it on my mind ever since. I tell you, I'm going to have to just break down and get one, one of these days that is.

Sharing a secret

So I make shirts from time to time. I've done crown shirts for pageants, football shirts for hog games, and now I'm working on one for my high school team so when I so watch them I'll have a cute shirt.

My normal routine is a tshirt from Old Navy, Walmart, Target, etc. Whatever I can find for cheap or decent quality. I never spend over $12. Then I hit up the above site for a cute rhinestone to add. Here are a few of my samples I've done for kids:

Say hello to my new friends

I recently posted at PNP about my addiction to coffee. I drink about 2 cups in the morning and occasionally 1 in the afternoon. Depends on how my afternoon is going.

My original thought to the post was to compare FF half and half to 2% milk. I use 2%, but honestly it runs me 1.5 points a day while FF half and half would be a point or less.

My trainer told me to skip the milk and use the FF stuff, but make sure those extra 1-1.5 points are used on healthy stuff and not your favorite ho-ho or something. After she responded my thought was I would love to save the points and use the FF Creamer, but honestly how good is it? After thinking it over, I decided to try it this weekend instead of my 2% milk.

I'm addicted. I love it. To me it tastes just the same if not better. In fact, it reminds me more of heavy cream and if it weren't for the fat in the heavy cream, I would use it daily. So I think I have a new found coffee addition.

My second find these days is this: Eight O'Clock French Vanilla Coffee
I can blame my dad on getting me addicted to this. He loves flavored coffee and he's tried every kind known to man. This is by far the best choice for convenience and cheap sake. I've tried Folgers...I didn't really care for it, but this flavor is awesome.

The bad part is I don't have my own coffee pot at work and the hubs doesn't really love it, so whenever I want it, I'll have to make it on the weekend. I did that a few times this weekend and it worked okay. I just love it.

Football Weekend Wrap Up

Well, Friday wasn't so good for the Cats. We lost bad....REALLY bad. We had fun though.
I didn't take the camera into the game so I have no pictures.

Saturday was the hog game. I took a few pictures, but I didn't think they turned out all that good. It rained most of the day on Saturday so it was humid and nasty outside. I promise I'll take some and share eventually. We don't play again until the 19th. The current plan is to tailgate so surely I can get some good pictures then.

Our weekend was good. We had family in town so we entertained several times. I made some awesome mint chocolate ice cream. It was SO not point friendly. It had heavy cream and half and half, if that tells you anything. It was gobbled up for sure.

So I said I would share some of my recent recipes I've been doing. This one was on WW website about a month ago. A lady in my meeting brought it to me. I'm glad she did, I've loved it.
Here is the recipe and a picture of it. The picture isn't all that great. It tastes better than it looks.
1 spray(s) cooking spray
1 cup(s) canned yellow corn, drained, or frozen, thawed corn kernels
1 Tbsp canned green chili peppers, chopped, mild or hot
15 oz canned pinto beans, rinsed and drained
1 cup(s) cooked brown rice, fresh or day old
3/4 cup(s) shredded reduced-fat Mexican-style cheese
3/4 cup(s) fat-free sour cream
1/4 tsp chili powder
1/4 tsp table salt
1/8 tsp black pepper
2 Tbsp scallion(s), chopped (dark green part only)
2 Tbsp shredded reduced-fat Mexican-style cheese

Preheat oven to 350ºF. Coat a 2-quart glass baking dish with cooking spray.
In a large bowl, combine corn, chilies, beans, rice, 3/4 cup of cheese, sour cream, chili powder, salt and pepper; stir in scallions.
Spoon mixture into prepared baking dish and bake for 30 minutes. Remove from oven and sprinkle with remaining 2 tablespoons of cheese. Return to oven and bake until cheese melts and casserole is slightly bubbly, about 10 minutes more. Let stand for 5 minutes to firm up before slicing into 6 pieces. Yields 1 piece per serving.

The story of the Wampus Cat....

So I graduated from Conway High School in 1996. Our mascot is the Wampus Cat.....

You will notice it is a 6 legged animal...that's "four to run with the speed of light, and two to fight with all its might." I know sort of goofy isn't it.

So tonight I'm heading to Bentonville, AR (home of Wal-Mart), but that isn't the point. To see the Wampus Cats take on the Bentonville, Tigers. I sure hope we win. We're leaving this afternoon and we'll be back L-A-T-E tonight.

Then on Saturday, it is Razorback Football time!

I'm interested to see how the team looks. The hubs made me my cheat sheet. Basically it is all the players on the team in the starting roles. I laminate it and take it with me to games. The funny part is last year I had men asking me questions! Ha! We have a semi new coach. He was here last year, so we'll see if our team has improved with a little more coaching. We didn't do as well last year so we're hoping for improvement.
Then all weekend we've got family in town as well. My aunt is here and then a cousin and his family will roll in on Sunday. It'll be a fun busy weekend.

I left my house this morning with a pot of beans in the crockpot. I've officially NEVER made a pot of beans so this will be interesting. Surely it won't burn the house down. It's on low for goodness sake. I left the hubs in bed this morning. I had to work! :( He didn't!
Anyhow, he'll probably awake to some interesting smelling stuff. Hopefully it turns out.

So I got my freezer purchased last night. It is preparing now so hopefully this afternoon I can stock it up. My poor little freezer inside is stocked full of stuff.

Next week I have several recipes to share. One is a skillet lasagna and the other is a Mexican recipe. I made them the last few weeks and they are definitely worth sharing. About a month ago I challenged myself to more processed food meals such as Lean Cuisine, Smart Ones, Healthy Choice, etc. I've been making 1 large meal on Sunday's and then eating that for my lunches all week. This has worked like a dream! I love it. Anyhow, I'm going to share a few of the ones I've been making here lately.

I'll also share the bean recipe if it turns out that is.
Gosh I hope so. By the time I bought a small ham and 5 bags of beans. Well, it wasn't all that much, I shouldn't kid myself.

The husband is on the road himself tonight. He is a high school ref. He travels the state every Thursday and Friday night. He's been doing it for 4 or 5 years maybe? He gets a kick out of it. He is back judge if anyone has a clue what that is.

Okay, I was just coming here to post about the Wampus Cat and I told you lots more than I intended.

Oat picture and a few hog details

Here are my steel cut oats this morning. It may look nasty, but it tastes awesome. Reminds me of blackberry cobbler or something. This runs me about 3 points. That would be 2 points for the oats and then 1 point for the fruit. The recipe is a few posts down. Also, someone asked me what I did with leftovers. I put them in containers and eat on it all week. They do great heated up in the microwave. I usually top it with a little water when I reheat though.

I'm gearing up for my hog weekend. I went to Wal-Mart last night and bought a few hog shirts. I think I'm going to go back tonight and buy another. They are just too cute. I'm a sucker for hog shirts and one thing I've learned, you must represent at the games. The hubs lets me buy whatever it is I want when it comes to hog gear. I gotta take advantange when I can! I'm just kidding of course, but I bought one hog shirt, 1 UCA (university of central arkansas (my alum)) and then also a Wampus Cat shirt. I'm a Conway Wampus Cat (high school) and I'm going to the game on Friday night and I needed a shirt. I'm in the process of making me one, but all necessary materials aren't here yet! :( I'll post it once I make it.

A few new finds....

So I was down .4. That is really close to half a pound as my husband reminded me. I guess. I'll take it. I'll admit I ate more this week than I have in weeks past. I ate all my extra points as well as activity points so that makes sense. This week though, I'm only allowing myself the extra 35 and nothing else.

After my meeting I stopped by a place called Drug Emporium. I love that place. They carry lots of whole food stuff.

Last week I ran across this. It is 2 points for 2 cups and a deal at that. I love bargains:

Then I ran across this today. I wasn't planning on buying it because my luck with gluten free stuff hasn't been the best. I thought for $1.89 what the heck. Yes, they were cheap.

This was 2 points for 37 of the crisps. I had to try them. They were really good. This will make a great snack or a chip for dipping in goodies.

Tonight is church. Our small group is meeting again. We basically took the summer off. Looking forward to seeing my friends again. I was told to bring cookies so when I get off I'm rushing home to bake some cookies and then the hubs and I are running to Chick Fil A, (because it's by church and I can usually find a lower in points dinner), and then going to our small group. Shew....I'm busy thinking about it.

I've still been doing my half marathon walks....I never really talk about that anymore. I did 8 miles last week and this week I may do 9 or bump back down. Not sure. It'll depend on my time. The husband's been going with me the last few nights because the weather is awesome. I doubt he'll go the long distance, but he might be in for part of it.

Okay, I need to get back to work....

Not blogging like I want...

I'm only blogging about 1 time per week these days. I was up to everyday at one point. I just get busy. I don't really have any excuses.

Today is weigh in day and I'm ready I think. We went out of town this last weekend, but I selected good choices. They weren't by any means great, but I did allow myself the occasional treat like a cookie, or a slice of bread with dinner, some tortilla chips at the Mexican place etc. Next time though I'm bringing my Guiltless Gourmet chips. I was kicking myself for not bringing them along. I love those things! 2 points for 18 chips. If you scroll down I posted a picture of them a few weeks ago.

I used all my extra points this week and most all of my activity points. I don't normally eat activity points. It'll be interesting to see if I still lost some. I would love to think so.

The last few weeks I've had an addiction to Steel Cut Oats! Oh my so yummy and so good for you. In AR the weather is cooling off so it makes eating a hot breakfast taste so good.
Here is my recipe:
1 cup steel cut oats
4 cups water
dash of salt
Splenda if desired

I spray my crockpot really good and then I put these ingredients in. I've been doing 5 cups of water instead of 4 though because I like that consistency better. I think it is slightly thinner with the extra water. I let mine cook on high for 3 hours or you can do low overnight whichever you prefer. This recipe is for 4 servings. Last week I added frozen peaches, this week I added a frozen berry mix. So yummy!

I use Bob's Red Mill Steel Cut Oats. I will tell you that they are crunchy, so you must cook them long enough. It isn't quick like normal oats. That is the reason I do mine in the crockpot vs stove. Here is a picture of the package:
