We celebrated several days last week. In between that and D's birthday! It got crazy. I loved having those few days off though. WOW, I slept like you wouldn't believe. I mean 1-2 hour naps daily and back in bed around 10. WOW, I feel so rested, it was wonderful.
I am back at work today and tomorrow due to projects! Boo....I got 3 out of the four down already today. I am trying now to finish the 4th. I'm going to come in tomorrow for a few hours but leave early. I am loving the time off and honestly I need it and deserve it I think! :)
So anyhow, back to Christmas...
We mostly got money, which was great. We got small items such as pajamas, coffee cups, socks, purses, etc. It was honestly a great time. We did the big spread for lunch on Christmas day and it was of course excellent. LOVED it.
My figure though, isn't lovin it at all. My clothes are tight and I look bloated all the time. So, as of yesterday I am back on the full force wagon. We got new 2010 stuff in for WW, so I pulled that out. I've already started back counting my food. I gotta get off some of this stress weight/holiday weight gain I've put on. I haven't put on 5 lbs, try 15-20!!! HELLO! Time to get it off before it gets worse.
So yesterday on my day off I joined a local gym. So excited about that. Even went last night and worked out...DOUBLE Excited!
I can't tonight though! :( Bummer! I am helping coach a cheerleading team for Upward! Tonight is our first practice, then after that I am suppose to go to my parents for some friends that are in town. Hopefully I'll be back to the gym on Wednesday and then during the day on Thursday.
Otherwise, I have today and tomorrow at work, then I'm off till Monday.
This weekend we head to Memphis for the Liberty Bowl. Yes, AR is playing and Memphis is a short 1 1/2 hours so we are going to travel and see them play. Should be fun, we'll stay in Memphis on Saturday night, however I gotta get home early on Sunday because I don't want to miss church. We missed this week because we went to my parents church.
Oh well, you can't be perfect.
Oh and I am so excited...Yesterday I purchased a cute bible cover for my bible! And, I also got a pamphlet I am going to use to read the bible in 1 year! I am so excited!
I must get going, this was so little about Christmas....Oh well!

So this year I put one on my Christmas Wish List! So, here you go! My new favorite thing!
I also got some monogrammed stuff, OPI Red Nail Polish, a robe, pajamas, and 3 new purses. It was just great! All the stuff we gave was a hit also. I was more excited to give out my gifts than I was to get mine. It was fun!

I got all the work stuff accomplished. Work party went fantastic! So happy about that. I've had multiple rave reviews, so that is good. We did a work slide show this year. 1st one for our office. It was a HUGE hit. Seriously, best part of the night in my honest opinion.
This weekend I participated in a church choir/drama called "The Lighthouse". We've been practicing since September! Saturday we had rehearsal and on Sunday we performed it 4 times. As you can tell I'm pooped. It was good though.
Tonight is my family Christmas. We do the draw names thing so we will exchange those and then my parents will give out gifts to each of my siblings and myself. Hubs and I buy for our nephews also, so we'll give those out as well. We also buy for my parents. Then I'll usually pick my sister and SIL something. Yes, I don't have to, but I do anyhow. My mom will make an elaborate spread of shrimp and grits as well as beef tenderloin and twice baked potato's. It will be awesome! Can't wait for that.
Then on Tuesday we are watching my nephew so my sister and BIL can go to a Christmas Party. Then on Wednesday the hubs turns 35.....We will celebrate with my in laws. It'll be a Birthday/Christmas party!
Thursday I am off! I took it off. I also will be off on Monday the 28th and then also the 31st. I took sporadic days because I have some end of the year deadlines! Boooo...Hubs is off all next week! :(
I'm excited though about the few days I do have.
I love Christmas and celebrating Jesus's birthday! I love this time year!

Work is insane and so are my outside activities. I have had something literally everyday for the last month. I just can't seem to say no to people.
I have the annual Christmas party for work on Friday night so I'm trying to hard to get all those details finalized. On top of that presentations, client Christmas gifts. Shew, I'm exhausted and it's only Tuesday!

I honestly have never been before. Yes, I admitted it. This year however, my husband and I have volunteered to work the event all 3 nights. Yes, we did.
The husband has a part as a Shepherd in the drama portion and I am working in the candle shop.
The idea behind Bethlehem is to take a walk and experience what Bethlehem was back when Jesus was born.
They have so many fun activities for kids, plus a drama, food, cookies, etc.
It is just going to be so much fun.
Last night we worked on our costumes. I'll try and post a picture of us before it is all over. We have to be in full Bethlehem clothing, so you'll see us looking rather different than present day.
On to other things...
My life is crazy busy with work, outside activities etc. I am pleased to announce that last night the hubs and I finished our Christmas Cards! YIPPEE...You can't even begin to know how thrilled I am to see those done. This is a record. I've never finished these cards this soon. This year we did 80 cards.

So this weekend I went and saw a friend of mine finish her first Marathon! So darn proud of her. I love races, they just warm my heart. I'm not counting another one out. Depending on this winter, I may just be in for another one myself. Still contemplating that though. I have a few halfs on the agenda, but another full...I'm not so sure yet.
So today is Monday and I have something every night this week. I still haven't had any time to join the gym and seriously, that isn't a lie. I'm really hoping I can join tomorrow. Right now Tuesday is my only free night his week.
T-Off (hoping to join the gym and finish my Christmas cards. The hubs said he would help! YES!)
S-I have a graduation to attend plus a graduation party, and a Christmas party.
Shew......I am already tired and Monday just began.
On to the reason I created this blog....
I did fairly well this weekend. I did eat some stuff that isn't diet food, but I didn't do bad either. I treated myself and I ate well. Look for me, this is an improvement, so I'm not upset with my choices one bit!
Okay, I gotta jet...remember I need to begin project #2......eek

This is a busy month for me, but honestly, I need to try and hold myself accountable and do well. I have several parties/functions to attend, and I figure if I don't commit to this, I'll be miserable in January.
So the idea behind this is to get a jump start on the New Year. I already plan on joining a gym and I want to do that before January also. I want to get familiar with the classes and such before the craziness begins. Plus I want to try and eat decent during this time. Yes, food will be everywhere, but I just want to try and limit the junk I consume.
I need the hubs to take some pictures of me and my measurements. I hope to do that tonight.
I have also challenged myself to NO weighing during the month. Come January I'll weigh and retake my measurements and see how I did. I can do this! I am determined to do it.
Anyone up for the challenge? I'll take supporters!

Wow, I need to start making a few priorities.
Last night I signed up to do a local 5K, and I didn't do it. I just didn't feel all that good. I got my shirt and I went home. Yes, I totally just didn't do it. Shame on me.
I was able to get started on our Christmas Cards last night. I have about 20 of the 80 accomplished. I spent about 2 hours on the 20. EEK at that rate I'll be New Years getting these things out.
I still haven't joined the gym. I know, I'm totally slacking. The problem is why join when I know I won't go yet. I am going to try and join on Monday, but next week I can only go on Tuesday! UGH! I told you I have a calendar that is totally stocked full of activities. Again, I gotta start working on some priorities.
Next week Bethlehem starts at Church. I'll give more details on that later. I'm working in the candle shop. I am so excited.

Wednesday we went to Silver Dollar City with friends and had such a grand time. I haven't been since childhood so I really didn't remember it. We rode rides and watched the Frosty show. It was such fun! I'm thinking the husband and I might be buying season passes next year.
Thursday was marathon turkey day. It started at my MIL's and then went to my parents. We ate both times. UGH! I actually at minimal at MIL's and had no dessert. Then we went to my parents and I really didn't have any dessert that time either. We always make this wonderful salad and it is basically like a dessert. I ate that and it was yummy as always!
Friday I went to bed at 10 and woke up at 1:45 am. Yes you read that right. I wanted to hit a few Black Friday sales... Old Navy opened at 3! So two of my girlfriends and I hit the Old Navy for $5 fleeces! We got in line about 2:30 and it was freezing outside. We made it though. I got everything I wanted. I even got stuff for my SIL and Sister. WOOT for that! I have decided that you must have a mission and then hit the checkout line ASAP. I did that all 3 times and was in and out in no time. My friends on the other hand had to wait 30 minute lines a few times. It was cool though. I helped them shop while they stood in line and then sometimes I would go load up the car, pick them up, etc. It worked out fantastic.
So after Old Navy we hit up Walmart! We all wanted TV's. Yes, the hubs and I got a new one. Lovin it! I got to walmart at 4:00 and we stood in line for 1 hour. I knew immediately I got the TV though. WOOT for that again.
Then we went to another Walmart, Target and then a children's store. Shew...it was a busy day.
I got home around 11 and was pooped, but I kept on. The hubs and I tore back out to Target and got us a TV stand.
Friday night I crashed about 9. I never did get a nap. I just had to much going on and was trying to get things accomplished.
Saturday I decorated! I got both trees up. I got a bigger tree this year. My parents let me have one of the ones they weren't using. It is twice the size of my old one. It looks awesome. Then I have my normal hog tree, however, this year I put it in the kitchen instead! So cute!
Sunday we did church at then another potluck. I'm so tired of potlucks! That was the last one though, thank goodness.
So all in all, we had a fantastic Thanksgiving break! Surrounded by Friends and Family.
I forgot to mention.....Hogs got beat by LSU on Saturday night! :( What a game. Overtime and we lost!
Finally, last but not least. I finally convinced the husband it was time to decorate outside! We are going to do some lights outside our house. Just one string of big bulbs around the house. Nothing fancy, just very plain and simple! I can't wait! I love Christmas!

Wow, my thankful list could go on for days!
Last night I went over to visit with a lady in our church. Her husband died of cancer last February. Wow, I must say how much of an eye opener that was for me. This lady is still dealing with difficult times. If you pray, you might remember her. Especially with the holidays approaching.
Last night I went home and immediately hugged my husband and told him how much I cared for him. I can't imagine my husband leaving me on this earth alone. One day it might happen and if God is ready for that then I am also, but until then, I want to enjoy our time together!
Today is the Thanksgiving potluck. I made those bars from my post yesterday. They are really yummy! Today is my last day to a LOOOOONNNNNG weekend. Can you tell I'm excited?

I am so ready for a few days off. I took off on Wednesday just because I had the time. I am excited to be off. My husband and I are planning on going to Silver Dollar City (a theme park in Branson) with some friends.
Lets see, our weekend was good. We went to the Razorback game on Saturday and also saw the Blind Side movie. It was really good. In fact, we loved it. Sunday was church stuff and dinner with friends!
One of my prayers recently has been that God would bring us some good christian friends and he has blown us away with that. We have been hanging out with two couples that we seem to have lots in common with. In fact, we did something with them on Friday, Saturday and Sunday. They are just fun to be around and the fact that we all have a desire to be Godly is a big plus. I am so thankful for what God has done for us. He is awesome!
Tonight I'm heading home to make this:
1 cup oil
Mix all ingredients together and bake in a 9x13 pan. (I sprayed my pan just in case) Bake at 350 for 35 to 40 minutes. Cool.
1/2 cup butter
1 box powdered sugar
Beat until smooth and ice cooled cake. Cut into bars. Refridgerate
These are to die for!!!!!!!
I'm bringing those to my work pot luck plus my MIL and Mother's. They are hit let me tell you. They are moist. Nothing like 1 cup of oil to do that. Yes, these aren't low in cal, but man are they good.
If I don't make it back in tomorrow, and I may not, I wanted to say Happy Thanksgiving to everyone!

It is in Litte Rock, which means 45 minutes from home! WOOT, I love it. Tomorrow night we have dinner/movie plans with friends. Lookin forward to that! We are going to see the new Sandra Bullock movie. "The Blind Side" I saw this story done on ESPN about 6 months or a year ago. It looks like a heart warming story.
I'm suppose to run in the morning, but right now, I'm honestly thinking sleeping in sounds better. Yes, I am bad. I'll admit it.

Our plans consist of:
Friday: Cats game, round 2 of the playoffs, Goooooo Cats!
Hubs is doing a game this week, so I'll be going alone....:( I'm sad, I like it when he can go with me and my friends to the game!
Saturday: Running that morning 6-12 miles, I know that is sort of vague, but I'm at least doing 6! Then we have the Razorback game on Saturday at 11:30.
Sunday: Church activites and choir stuff
No rest for the weary this weekend!
So as I've mentioned I'm running again! I'm glad to be running. I enjoy it for the most part. I really don't want to do long distance stuff, but I do want to do something. I think for now I'm going to keep up a 6 mile base. Then when I want to train for a race I can just pick it up and start adding on. With my new gym I'll be able to do some cardio stuff with some classes, so I won't always run, but I'm looking forward to getting back to it.
I prefer running in the winter vs. summer. I honestly normally take off the summer due to 100 degree temps in AR. I'm not going to let the winter temps stop me though. I'm going to keep it up.
I think I'm going to do a local 5K in AR the first of December. I did it last year. It was called Dashing Through the Lights! Is it bad that part of the reason I do it, is so I can get a cute shirt! I'm so bad!

Work is busy and hectic....
I'm so glad that Thanksgiving is approaching. I love this time of year. I'm also looking forward to a few days off.
So I decided I'm joining a gym. Not until after Thanksgiving but I am. I'm excited about that. First and foremost, they have a pool! Maybe I'll finally tackle that Tri I've been wanting to do. Plus they have tons of classes and also spin. I've always wanted to try a spin class. I'm interested to see how that goes.
So, I'll be an official gym member soon! Yippee...I can't wait!
Tonight is Sushi Night and Church Night!
I am about done with my Christmas shopping. I am so excited about that. Plus I got the work client gifts bought. Yippee for that! I'm on a roll in that department.

The next morning, I got up at 8:30 and did 10 miles with a friend. We didn't run all of it, but I did bust out a decent run seeing as I haven't really run for 2 months. oops!
We had a really busy weekend, but a fun one. This is my last full week before Thanksgiving. I'm so excited. I'm ready for a small mini vacation!
Tonight I was invited to play Bunco, but I think I'm going to pass. I'm honestly about half sick. I sang in the choir yesterday at church. That means we start at 7 am and do 3 services. My little voice is tired. Then on top of that, we had a rehearsal last night for the Christmas program. I was really tired after that was over.
I'm off to try and make Monday as productive as I can....

It was by far a very productive day. I never get a day off in the middle of the week. Made me wish I worked part time and had a little time off every now and then.
Today is Thursday and I'm gearing up for a busy weekend. I have lots on my plate and so little time to do it in.
I'm also coming to post that I've done cardio 2 days in a row! Give it up for me. I'm on a roll! That is 3 days of exercise I've accomplished so far this week. I should be on target to get in my 4th on Saturday. Still planning on running with my friend.
Today I'm going to Holiday House a benefit for a local group in AR. My sister and I are going to rummage around and see if we can score any deals! Last year I got some great wrapping paper. I'm hoping I can do that again!

I did some circuit training! Wow, it kicked my butt. I hadn't done much of that recently so it was a different pace for sure. I was sweating when I finished not to mention winded and a little shaky.
Tonight I plan on getting in some cardio. Maybe a little running and walking. I already asked the husband to go with me. He didn't commit but he also didn't say no.
So I'm off tomorrow! Yippee......
My husband has it off for Veterans Day and honestly, I just wanted a day off. I actually have some hours I'm going to lose if I don't use them. I only have about a month left and I need to use about 15 hours. So, I thought tomorrow was a perfect day.
We don't have plans except church tomorrow night. I'm planning on doing some grocery shopping but that's about all.

On Friday I worked. Not sure why I did. Everyone was off and I should of taken off myself. I came in and worked until noon.
When I got home on Friday I took a 2 hour nap. Man did it ever feel good.
Friday night I volunteered to help with a ministry called Growing with Grace. I had a great time doing that and the hubs was gone to his last regular season football game so it worked out good. I will for sure volunteer again. I had a great time.
Saturday we woke up bright and early for the HOG game. We won that game also! It was just a winning weekend all around. Oh and the Cowboys won too!
Sunday was church activities, another 2 hour nap and then choir practice. We are gearing up for the holiday season so we've been practicing every Sunday since September I think. We did have a few weeks off but we are locked in to every week with Christmas nearing.
This week is busy also, however, I'm going to make it a goal to exercise this week. I am going to start some new circuit training with weights tonight. Then tomorrow I would like to get in good walk/run. Wednesday, Thursday and Friday are nights I'm out, so I'll have to figure out what I can do. Saturday I've been asked by a friend to run at least 6 miles with her to help her train for her marathon next month. She is breaking it up and I got 6-8 miles with her. I haven't done that kind of distance in a while. EEK!
So here is what my schedule looks like for right now:

Th: Off, maybe a short walk if I can get that in after a rehearsal I have
F: Off (going to the CATS playoff game)

So I can't guarantee I can do all of this, but I'm laying it out to see how I do. Even if I do 50% of this, that is a start!

I persuaded the husband to take tonight off and go with me, so we are meeting some friends at the game. I'm going to try and take a few photos tonight if I can.
But before the high school game the Jr. High 9th grade team is playing. The husband got to call that game so he is doing that before. It just happened to be a lucky coincidence.
Tomorrow is Friday and the husband is off work. I should of taken off too! Oh well, I did take off Wednesday for Veteran's Day. The husband is off because he is a state employee. I decided why not take it off also, so I'm off on Wednesday! WOOHOO!!! I love a day off. If I can just make it through tomorrow.
This weekend is the South Carolina game. I sure hope we win!

It was okay. I think I would rather do ground beef. I may try that next time. Don't get me wrong, it tasted good, but I think I would prefer ground beef over sausage.
Bunco was fun. We had 20 people play. This group has grown so much.
I have a busy week and weekend. I have projects at work, church tonight, high school game tomorrow night, church function on Friday, razorback game on Saturday. Busy, Busy, busy.
Tomorrow night is the last regular season Cats game. So sad....
The husband is going to call the Jr. High game before this game and then we'll both go watch the high school game together. All year long I've had to go by myself. Not tomorrow, he'll get to go. Of course I always sit with friends, but this is the first game he'll get to see with me.
I know this is short and not much, but work is so busy...........

I made a cheese dip to bring. Sooooooo not healthy! It was a recipe my SIL shared.
1 lb breakfast sausage
3-8 oz. blocks of cream cheese
2 cans of Rotel
She said it's awesome! I thought I would give it a whirl. I put it in my crockpot this morning when I left. I need it to be ready when I get home. Bunco starts at 6 and I don't get home till almost 5.

I'm working all day today! Boo..... Then tonight my grandmother and I are going to dinner and then I'm heading to the Conway game.
Saturday the only thing I have planned is the grocery store, a little cooking and the Fall Festival at church. I volunteered to do games. Hogs play on Saturday night, I may watch the end of the game.
Sunday is church stuff all day and then dinner with friends. They are coming to my house this week.
Last night I spent all night. Literally from 5:30-10:00 cleaning up/straightening around the house. My floors needed desperate attention and so did some of my furniture. I dusted, vacuumed, cleaned, etc. I must say it looks pretty spiffy!
I'm really glad to see the weekend rolling around. I'm looking forward to a nice relaxing weekend! I'll leave you with a picture of some pumpkins! I love the color orange!

Trying to decide. If I register this week I get a discount. Fee goes up next week. Seriously, it is only $10.00. I shouldn't get so worked up over that. I'm thinking about it.
I figure I will do the half regardless. My sister wants to do another race so she and I will probably do it together.
Not sure if any of the other family will.
Work is busy, I'm busy and well, I just don't have much time for me these days. I gotta get back to that though. I feel like I'm blowing up again. Christmas is looming. WOW, busy times ahead.
Today I knocked out the Christmas party invites for work, Shew...I'm tired.
I wish I was off again tomorrow. Honestly, I wish I had every Friday off or every Monday. I used to work a 4 day work week. 10 hour days are hard, but SOO worth it when the day off arrives.
I have about 17 hours I have to burn before December. Our fiscal year rolls over before Christmas. I better use it or lose it. I better start thinking now about when!

Work has picked up for the year. Lots happen towards the end of the year for us. We seem to send out tons of cards, invitations, entertain at parties, not too mention all the projects that come due at year end.
Lately I've been going through that burnt out stage. Just the same routine over and over. I'll get past it just like I always do, but it still stinks. I think the rain isn't helping. It has rained in Arkansas at least 2 times a week since July. I'm not kidding either. In AR we normally have HOT and HUMID weather until October. Not this year. Fall is here and winter is approaching.
Yesterday was my last hair appointment with my normal gal. She is going on maternity leave and isn't sure when she'll return! So, I'm going to try someone new. I'm a little nervous about that just because I've been using this gal for about 6 years. She knows what I like, how I like it, what color to use, etc.
I decided to use a new gal that is in the same building though, so when my gal does return I can always go back. My gal told me I wouldn't be disappointed with who we decided on. As long as I have reassurance I'm good.
Tonight is Sushi and church night. We've been doing sushi with my sister and BIL pretty regularly on Wednesday nights. I've been loving sushi lately.
I'm pretty much back to normal after Saturday. I had a little soreness but that went away by Monday. I'm back to myself. The race was fun and I enjoy them. I look forward to next year. My brother is wanting to run it!
Depending on whats going on with me at the time, I'm sure I'll do it also. Although, maybe we'll be talking about extended the family by then! I hope.

Busy day for me and I'm trying hard to get it all in.
The chicken recipe was great. My only complaint was when I reheat it, I'll do it in the oven or toaster. Microwave is sort of gross.
Only a few more days till my half. I'm trying to remember but I think this is my 6th half marathon! WOW......
This race is a family affair.
After my marathon last year my mom really wanted to do a race, fast forward to today and we are gearing up for her FIRST half marathon! She's maybe done 1 5k ever! She went from nothing to a half. The fun part is her sisters are participating also, so not only is it my mom and her two sisters but also me and my sister plus my sil! Gonna be a giant family party!

Baked Chicken Fingers
1 1/2 lbs. boneless, skinless chicken breasts
1/2 c. skim milk
1 Tbsp. Dijon mustard
1/4 c. sliced almonds
1/4 c. rolled oats
1/2 c. whole wheat bread crumbs
1 Tbsp. dried parsley flakes
1/4 tsp. freshly ground black pepper
Preheat oven to 375 degrees. Lightly coat a baking sheet with olive oil.Trim any fat from chicken and cut into strips (approx. 6-8 per breast).
Stir milk and mustard together in a bowl. In a separate container mix together almonds, oats, bread crumbs, parsley, and black pepper.
One at a time, dip chicken into milk mixture then dredge them in oatmeal mixture, making sure each piece is evenly coated.
Arrange on baking sheet and bake for 14 to 16 minutes, turning once, or until chicken is cooked through and coating is golden brown.
Nutritional Information: Calories: 250, Fat: 8 g., Carbs: 7 g., Protein: 37 g.
I'm thinking I'm going to really like it. I had one or two bites last night after it baked. I did this for my lunches this week so I'll have it officially at lunch today.
I also prepped up some sweet potato's, chili, okra, etc.

Friday was the Cats game. Saturday was Race for the Cure, AR vs. FL, a wedding. Sunday was church activities all day. Shew, I need a day off.
Hopefully next Monday. I was hoping for Friday, but it looks as if something came up. I need to just request Monday off so nothing out of the ordinary will pop up. I might go in late on Friday though. We shall see. I'll probably do both!
Weekend eating was good. I didn't do food prep yesterday. No time! My plan is to knock it out tonight. I'm planning on making a Pot-O-Chili tonight and then maybe a recipe I found for baked chicken fingers for my lunches this week. I'll also do more of my roasted okra. I love that stuff.
So far so good though. I would consider week 1 of clean eats a HUGE...I mean HUGE success!
So I started my Christmas Shopping...Hello, we have almost 2 months till Christmas. I have got to start my Christmas cards. Yikes, I'm beginning to feel overwhelmed. I know for a fact I'll be making right at about 125+ cards this year! EEK...
I've been at Hobby Lobby all morning working on gathering stuff up for work cards. You see, the dummy that I am decided way back when to make homemade cards for the office Christmas party. Now they expect that too....
At least I didn't pay for the supplies!
I better get going. I figured I'll make a sample card up today for the bosses viewing. I need to get these out in a few weeks.

Sunday is church stuff all day. First off church and Sunday School, then lunch at my moms and then on Sunday afternoon we're doing our Light Bulb Service Project. More to come on that on Monday.

I'm still eating really good. Last night I was going to do have leftovers but after getting home, changing, needing to be at church by 6, we just didn't have time. We opted to run to Chick-Fil-A instead!
It is by far probably one of the healthiest options for fast food. I guess Wendy's and Subway would be second and third on my list.
So here was yesterdays food! I rocked it! WOOT!
B:3 egg whites, spinach, asparagus, tons of mushrooms (new recipe, it was okay)
S: 3/4 cup cottage cheese, 1/2 cup strawberries, a few pecans

I've also been journaling my food in my WW journal. I'm proud to say I'm staying within in my limits! WOOT again!
So our church is working on a service project. We are doing a light bulb type of ministry. Last night we attached cards about our ministry and our church. Last night we tied the cards to the bulb and on Sunday we'll head out delivering these to our community.
Last night was a busy night!

So I once again tried it.
Today I mixed in some strawberries and a few walnuts.
I think I found me a new protein snack! I LOVED it. I thought I might sprinkle some splenda on it, but I didn't need it. It was sweet enough with the strawberries. YUM, YUM, YUM! Okay, I'm going to post a picture of it, but for Brandon and the husband who both make comments about my food, just don't look at the photo, it'll probably gross you out!
I have a WW meeting today, errands to run, food to make for a friend, small group tonight, etc. Busy day! Gotta get going!

Anyhow, I have subscribed to the magazine for a year or so and they have some great recipes. So I pulled a few of them out and started looking to see if I could find some new stuff to make.
I plan on hitting the grocery store tonight for the following stuff:
Cottage cheese 1%
I'm also going to start drinking protein shakes again!
Tonight my plan is to make some hummus...I'll post the recipe and the finished product in the morning.
I also plan on prepping up stuff like oatmeal, omelette's, turkey burgers etc for breakfast and lunches.
It'll be a busy night for me tonight.
I'm also going to start hitting the weights again. With my groin injury I'm limited on the cardio so I'm going to hit the weights and see what kind of progress I can start making!

I'm telling you, please go check this lady out. She has some really cute stuff! It took about a week to arrive, but that was because I live way down south and she lives in Canada. It was so worth the wait. As I was typing this, someone sent me a text and I had to take it out of my case! So cute with that little button on top!
So yesterday I got my muffins made. I tried a homemade recipe. They turned out fabulous! I made 48 muffins! Then I also got the wedding present bought....I was on a roll yesterday! Oh and the new OPI color! LOVIN it. I promise to post the name. Flu shot went well, but man my arm is slightly tender. We also got pneumonia shots so I got stuck in both arms! Yes, last night it was rather difficult trying to get comfortable. Especially when you lay on your side to sleep.
We are headed to Fayetteville tonight. The hogs are taking on Auburn. I'm scared!

1. Getting my flu shot and pneumonia shot today.
2. Crazy work day with lots going on
3. Baking, Baking, Baking-I said I would donate some muffins for the Conway High Football team. Actually our church is sponsoring the breakfast on Friday morning so I offered to help do muffins. I said I would make 24, but I bet I double that. Then I'm picking up muffins from other people and delivering all of them to a friends.
4. I have to pack for the weekend. We are heading to Northwest AR for the AR vs. Auburn game. We are going up tomorrow night after the husbands football game.
5. Paint my nails. I bought a new color yesterday. I forget the name, but it is OPI and a really nice fall orange color.
6. Buy a birthday gift for a child. We are swinging in on Saturday night for a birthday party at a friends parents farm. We are having a weenie roast and a hayride. FUN!
7. I also have a wedding to attend next weekend and I really need to find a gift as well as a new outfit.
8. I have multiple baby gifts I need to work on. I have one blanket bought, but I need to buy another and get those suckers off to my new monogramer! By the way, a lady at my church is doing this now! So excited!
9. Work on my grocery list! I'm trying hard to start doing more "clean" eating. I've sort of neglected this as of late. I do eat good, but I tend to use to many easy foods, however, I have been laying off the processed frozen dinners. WOOT for that.
So that is my list. I'm sure I have more to add.
I won't accomplish that all today, but I must do it soon.
Today I'm starting my grocery list. I'll try and post that today! I'm also going to look at several of my Clean Eating Magazines for some recipes...I'll try and post a few once I make them.

On a side note, I found a cute pair of jeans on Ebay for $25.00, that includes shipping. I love SEVEN jeans and I found a brand new pair.....I hope they come in by Friday.
I also haven't gotten my new iPhone cover yet. Boo! It was coming from Canada though, so I figure going USPS it might take a few days.

So, I figure today isn't going to be easy!
I have my weekly WW meeting today and usually I hit up the local health food store afterwards, so hopefully I can find me a few things to make it through the day.
I have a few things in my desk I can scrounge around with, but I know it won't cut it! While at the store today I'm stocking up on more toasted edamame. I've been lovin that stuff.
I have heard lots of great things about Amy's products. I finally decided to try them over the weekend. I just tried the burrito.
That's my hope.
So lots of people are sick in our office....Just to name a few things: Stomach Bug, Swine Flu, Bronchitis, sinus infections, annoying coughs, etc.
I'm trying so hard to stay well. I'm crossing my fingers I don't get anything.
Tomorrow is the annual Flu shots at work. Our company pays for it in hopes we will partake and then stay healthy. Heck, I'll take a free shot. We are also going to get the pneumonia shot as well. Just trying to keep ourselves as healthy as possible.
I'm off to drink my coffee....it tastes awesome today!

This weekend I was really lazy. It was actually able to catch up on some much needed rest. I slept in, took naps, rested, stayed in etc.
I still feel like both myself and my husband are fighting sick. We've both not felt 100% these last few days. Both of us are taking our vitamins though. We really don't want to get anything.
The hog won against TX A&M so that was good.

1. Today I'm wearing my Marathon pull over I purchased for the marathon! It makes me remember that day and how awesome it was. So my trainer did a blog on the competition I placed in. Check it out! I was super impressed with 3rd place! My friend Dawn and her husband won the couples challenge.
Today we're expecting heavy storms down south. In fact, the weather is already looking sort of dreary and nasty. This morning I broke out my corduroy pants. I'm sure it was a little soon, but I was ready. I'm sort of cold natured anyhow, so even in the summer I'm wearing my cardigan around the office.
So because I got the new iPhone, I had to purchase these! They are covers for my iPhone. I actually purchased a red one and a grey one but when I went to look at the site to get a picture they were gone. Perhaps I purchased the last ones? Anyhow, they had TONS of other cute colors. I think I could of purchased one of each color, but I opted for 2 only ! This is the site. The name of the lady that does them is TheFinickyStitcher. Check this cute little thing out:

Okay, so I downloaded the weight watcher app for my phone. Hopefully I can start journling on my phone as well. We shall see. I haven't officially journaled yet, but I did add it to my phone.
My next task is to find me some sort of case to carry it in. I already purchased a protective cover, but now I want a small pouch or bag to carry it in while inside my purse. I'm on a mission to find one of those tonight. I was hoping Vera Bradley makes a cute bag. Not sure though I can find the size I want. I want it minimal in size. I'll have to do some research on that some more.
Food is going okay. I need to buckle down a little. I rewarded myself a little over the weekend with a few too many indulgences. Last night I had a few french fries etc. Time to buckle back down. I weigh in tomorrow! EEK.

First of all our car is having trouble. Our 2004 Honda has 180,000+ miles on it and it seems to be having more and more troubles these days. Yesterday the husband and I just knew our Honda's life had just ended. Thank goodness it was fixable. It is paid off so we really want to enjoy that a little while longer!
Then I took half a day vacation to help my sister with 2 catering jobs. While helping, I dropped by phone! It isn't working!!!!!!
I had to call the cell phone company and get them to disconnect while in the mean time I had to dig around and find my old phone and charger! What a day. I was up till way too late last night trying hard to get that figured out.
I plan on going today to see if my phone can be fixed. We shall see. Hopefully so, if not, I may be stuck with my old phone till we decide what we plan on doing. We both want Iphones so this may be the time to do it. We've enjoyed the blackberry but we really want the other. It will require changing companies, but I'm okay with that.
Okay, today I'm headed to a cookout for work. One of our Wastewater Treatment Plants is having a grand opening for the new renovated facility so I'm off to cookout. Yes, I said cookout at a wastewater plant! Sounds disgusting doesn't it. We probably won't even be near the actual "area" but YUCK!
I work for civil engineers, hence the reason I'm even attending such a thing.
Okay, big weekend of absolutely nothing!!!
I'm planning on running in the AM and thats it. We'll watch the HOGS take on Alabama this weekend but thats about it. I love it....Sounds awesome just to say home. I really want to do some house cleaning and a little cooking.

I bought a few things to try. One is this:
I also purchased these! I of course love Guiltless Gourmet stuff. I normally buy the blue chips but I branched out and got the normal corn chip flavor this time. I'm sure they taste roughly the same. 2 points for 16-17 chips I believe.
Then I noticed these as I was heading out. I've only tried edamame a few times so I wanted to see what a dry version was like. Oh my goodness...YUMMY and full of protein. I'll definitely get these again! 2 points for 1/4 cup. Then finally, I noticed these. They are just okay. I think by themselves I could refrain, but on a salad it was be a nice crunch. It is little baked crisps made from bell peppers, tomato, carrots, pumpkin, spinach, etc. Again, not bad as a salad topper, but not something I would eat on a regular basis as a snack. 3 points for 1 oz. I would obviously not use many to save my points. Would just be a nice added crunch.
I must get going. For some reason, I am swamped today....

So, here is the recipe:
Makes 6 servings, 6 points each.
1 1/2 lbs boneless skinless chicken breasts
15 oz whole tomatoes
10 oz enchilada sauce
1 medium onion, chopped
4 oz chopped green chilies
1 clove garlic, minced
2 cups water
14 1/2 oz fat-free chicken broth
1 tsp cumin
1 tsp chili powder
1 tsp salt
1/4 tsp ground black pepper
1 whole bay leaf
1 cup fresh or frozen corn
6 whole corn tortillas
2 Tbsp vegetable oil
1 Tbsp chopped cilantro
Cook and shred chicken. Combine in crock pot with all ingredients except tortillas, oil, and cilantro. Cook on low 6-8 hours or on high 3-4 hours. Preheat oven to 400 degrees. Cut tortillas into strips and place on baking sheet, brushing lightly with oil. Bake 5-10 minutes or until crisp. Immediately before serving, sprinkle tortilla strips and cilantro over soup.

Saturday we went to the Razorback game.
So, we lost, but I guess you can't win them all.
We got home L-A-T-E on Saturday night.
Sunday we had church, lunch at my mom and dad's, then our yard was a jungle so we had to mow it. Then a friend of mine had 2 extra tickets to see Jeremy Camp, Natalie Grant and Bebo Norman. WOW, awesome concert. I had heard of both Jeremy Camp and Natalie on Klove, so I knew most of the songs they played.
We had a good time but again, L-A-T-E night, especially when you wake up at 5 in the morning.
Saturday I opted not to run. I just couldn't do it. I really wanted to, but I was afraid to push my leg and I want it to heal. I figured if I did something on it, I might injure it worse and then have to push running back even more.
I had a super duper eating weekend. I ate so good....WOOT for that!
PNP challenge stats have to be submitted by Thursday, so I'm going to take my final stat pictures in the am. I've lost about 9 lbs. I'm not sure I can squeak out 10. I wanted to do so and 10 was my goal, but I'm beyond thrilled with 9 lbs!
Okay, I better hop off here and get some work accomplished.

My running group is running in the morning. The plan is 10 miles. I won't do all 10, but I'm going to try and maybe do 4. Not sure exactly what I'll do, but I'm going to try something.
We will go at 5:30, so the nice thing is I'll be done early in the morning.
Today I have my manicure appointment and then tonight the husband has a game near our home. They are normally 1-2 hours a way. I'm going to go out and see him do his ref thing. Last night he was a white hat. For those of you that know what I mean, it is a big deal to white hat a game. He said he did good.
So last night I spent the night catching up on DVR shows. I watched BL, and a few other things I had tapped. I didn't get to Project Runway, but I will sometime this weekend.
BL is going to be good this season.
I also was flipping channels and landed on Beaches. Okay, I'm such a sap. I cried at the end. In fact, I was crying when Hillary got pregnant. I knew what was looming. The husband got home right at the end of the movie. He couldn't believe I was crying. That is a movie that just makes you think how short life can be sometimes. I know it might be cheezy to some, but it still had me boohooing!
This weekend I'm making a crockpot chicken tortilla soup. Sounds delicious! I'm also stocking up on okra this week for more roasted yumminess!
I have officially 5 days until our Back to School Challenge ends at PNP. I really want to win! I'm so going to bust it hard this weekend and next week to finish out strong.

By the end of day yesterday I was limping.
I think I might of pulled my groin. I laughed yesterday with a boss because I told him I thought I had hurt myself. He asked me what I did and I told him I thought I had pulled my groin. I then proceeded to ask him if women can pull groins. So here me and the boss are talking about our pulled groins. WOW, what a weird conversation. He proceeded to tell me that when he ran track he pulled his groin often and that the recovery time can be sort of lengthy! Great!
So last night I stretched it and went to bed. This morning I woke up to minimal pain. I'm not sure if that is because I rested it all night or if maybe the injury isn't as severe as I thought. I'm not taking any chances though.
Will rest today and then think it over and decide on when I can really jump back in.

Anyhow, back to my original post. It's been raining cats and dogs here. I woke up several times last night to rain. Not just mist rain, I mean buckets.
So last night in between the rain I got out and ran. Okay, I'm going to admit it, I'm SOOO SORE! My legs are killing me. I walking on Monday to help with soreness and that was good, but yesterday I really wanted to hit the pavement. It immediately started hurting. When I say hurting, the only thing bothering me is my legs, in fact it is the inside of my thighs that are feeling it the most.
When I started yesterday I about stopped, but it got better. I ran for about 30 minutes. It wasn't easy, but the humidity must of been 90%. YUCK! I was one sweaty mess when I got home.
I love apples in the fall. My favorite apple is Rome, but I'll eat any kind. The last few weeks I've been buying Golden Delicious. They haven't been up to par, but I've eaten them. Someone told me that when you have a high sodium meal to eat an apple afterwards and it helps with sodium. I have no idea if that's true or not, but I'm not opposed to trying it.
Anyhow, I'm ready for my Rome's to start popping up. Hopefully here in the next month or so they will.
My reason for discussing apples is: Last night I had a few golden delicious apples that were turning yucky. I had looked at them for days and thought I needed to eat those. They just didn't look appealing. So while cooking dinner last night, I had a bright idea to cut around the bad spots and chop it up. I then topped with brown sugar splenda and a little bit of smart balance. I then put it in the microwave and nuked for about 5 minutes. I decided to peal one of the apples, but leave the skin on the other. Oh my goodness that's all I have to say. I did allow myself only 1 serving though.
I figured it out to be about 2 pts for each serving.
Today I have my weekly weight watcher meeting I lead. Last week we started a new 10 week session and we had 4 men join. Will be interested to see how well they do.

So, here it goes. These are the ingredients you need:
When I was a child, my mom would make fried okra. My ultimate fav in the summer time. This recipe is basically roasting it, but I let mine cook for a while. I want it crunchy like the texture of fried. I let mine roast for 2 hours on 400 degrees. Yes, that is 2 hours. I stir it every 20-30 min. In the beginning you'll see the slim a little, but just give it time, that goes away, I promise.
So here is the finished product:
In fact, I can't get enough. I could sit and eat the entire bag in one setting. Sure it is healthy, but I probably don't need to indulge in that much okra in one setting.
Anyhow, I would highly recommend giving it a try.
Regardless of okra, I love roasted veggies. I love to roast zuch, squash, onions, egg plant, etc. I've even done a potato every now and then.
Totally give this a try.
Tonight I'm doing taco salads for dinner. Man it's been a while.

Friday night I went to the CATS game. It was fun, but we lost again. I will say we've made some great improvements from the week before. Maybe this week we'll be able to win.
Saturday morning I decided to go running with some friends that are training for the Memphis St. Jude Marathon. This week they were scheduled to run 10 miles. I wanted to think I could do it, but I wasn't sure. I haven't run since the marathon in March, so I knew this would be a slight challenge for me. So we went at 5:30. For those of you familiar with Jeff Galloway he does 4:1 or 8:2 etc. I did the 4:1 method of run 4 minutes walk 1 minute for all of my halfs and the full. This running group though does 8:2. It was a slight adjustment for me. I went out and in the end ran 6 miles with the group. One lady needed to stop at 6 due to an injury she is still nursing so I decided I would stop so that I would keep myself from injury.
The worst part was the last 1/2 mile. I had gotten tired and really hot by that point. I made it, but I had to push myself a little.
My plan is to run 3 days this week at 3 miles each using the 8:2 method. Then on Saturday they are doing 10 miles again. I'm going to go out and run with them again and see how it goes. If all goes well, I'm seriously thinking about signing up for the Memphis full in December.
Baked Pasta with Butternut Squash and Ricotta
2 spray(s) cooking spray
20 oz butternut squash, fresh, peeled and cubed*
1/8 tsp table salt, for cooking pasta
12 oz uncooked whole-wheat pasta, penne
1 1/4 cup(s) fat-free skim milk
2 Tbsp white all-purpose flour
2 tsp minced garlic
1/2 tsp table salt
1/4 tsp black pepper, freshly ground, or to taste
1 Tbsp thyme, fresh, chopped, divided
1/2 cup(s) part-skim ricotta cheese
1/3 cup(s) grated Parmesan cheese, Parmigiano-Reggiano recommended
1/4 cup(s) chopped walnuts, toasted
Preheat oven to 375ºF. Coat a baking sheet with cooking spray. Coat a 2 1/2- to 3-quart baking dish with cooking spray.
Place squash on prepared baking sheet; roast until tender, about 20 to 30 minutes. Place in a large bowl and mash.
Meanwhile, bring a large pot of salted water to a boil. After squash has been roasting for about 10 minutes, cook pasta according to package directions; drain and return to pot.
In a medium saucepan, whisk together milk, flour, garlic, salt and pepper. Bring to a boil over medium-high heat, whisking frequently; reduce heat to low and simmer, stirring often, until thickened, about 2 minutes. Remove from heat; stir in mashed squash and 2 1/2 teaspoons of thyme. Add sauce to pasta; toss to mix and coat.
Transfer pasta mixture to prepared baking dish; dot with spoonfuls of ricotta and then sprinkle with Parmesan and walnuts. Bake until top is lightly browned in a few spots, about 15 to 20 minutes; remove from oven and sprinkle with remaining 1/2 teaspoon of thyme. Yields about 1 cup per serving.

One thing about this recipe that I'll change. I'm not a huge thyme fan. I cut it down in this recipe, in fact I didn't use all that is required. I think next time I might even leave it out.
